Higos Rellenos
Ingredientes
- 12 higos maduros de 30 g cada uno
- 125 ml de nata
- 30 g de miel
- 125 g de pulpa de higo
Para el granizado de miel
- 750 ml de agua
- 250 g de miel
- 1,5 hojas de gelatina
Para la salsa de naranja y frambuesa
- 250 g de frambuesas
- 125 ml de zumo de naranja
Para la leche merengada
- 800 ml de leche
- 200 ml de nata líquida
- 1 trozo hermoso de piel de naranja y de limón
- 1 astilla de canela
- 150 g de azúcar
- 100 g de claras de huevo
- 25 g de azúcar
Preparación
- Cortamos los higos por la parte superior y los vaciamos con la ayuda de una cucharita de café, consiguiendo así los 125 g de pulpa.
- Semimontar la nata y añadirle la miel.
- Mezclar bien y reservar en la nevera.
- Agregar la pulpa de higo a la nata.
- Rellenar cada higo con la mezcla y tapar con la parte superior a modo de sombrero.
- Si no se van a comer enseguida, reservar en la nevera.
Para el granizado de miel
- Mezclamos la miel con el agua en un cazo y hervimos.
- Retirar del fuego y, cuando esté tibia, añadir las gelatinas previamente hidratadas en agua fría.
- Mezclar bien y verter la preparación en una bandeja con paredes altas.
- Congelar.
- Justo antes de servir, rallar el granizado con un tenedor.
Para la salsa de naranja y frambuesas
- Trituramos 200 g de frambuesas con la ayuda de una batidora de vaso.
- Pasar por un colador y mezclar el zumo obtenido con el zumo de naranja.
- Reservar en frío.
- Colocar una base de salsa de frambuesa y naranja en el fondo del plato, y sobre la misma disponer los higos rellenos.
- En el último momento, antes de servir, añadir 1 cucharada de granizado de miel y los 50 g restantes de frambuesas enteras.
Para la leche merengada
- Ponemos en un cazo la leche y la nata.
- Añadir las pieles de naranja y limón junto con la canela, y hervir.
- Agregar 150 g de azúcar y retirar del fuego.
- Enfriar, colar y refrescar en la nevera.
- Semimontar las claras en un bol e incorporar otros 25 g de azúcar.
- Añadir la mezcla fría y verterla en botellas a través de un colador.
- Introducir las botellas en una cubitera con hielos.
- Servir en un vaso, y listo.
